Music surfs the clouds in “Giant.” It seems fitting that for this adaptation of Edna Ferber’s 1952 novel, which opened on Thursday night at the Public Theater, the orchestra sits not in a pit but in a loft above the stage, sandwiched between scrims aglow with vast skies and sunsets. This is a high-reaching musical, and practically every number in it is one of determined aspiration.
