For Mrs. Robert Henry, good conversation is sacred, something to put your faith in, along with God and country. A fanatically gracious small-town matron, Mrs. Henry (Dolores to her friends) proselytizes tirelessly for this religion in the opening entry of “Harrison, TX,” an evening of three short, piquant plays by Horton Foote at 59E59 Theaters. And shame on those who dare dismiss her as just a flibbertigibbet.
